Ounces to Grams: what to know

US recipes, nutrition labels and parcels often list weight in ounces (oz), and metric scales read in grams. The avoirdupois ounce is defined as 1/16 of the international pound, which is exactly 0.45359237 kg (NIST Handbook 44), so one ounce is exactly 28.349523125 g. To convert, multiply ounces by 28.349523125.

Worked examples: a 4 oz burger patty is 113.4 g; an 8 oz steak is 226.8 g; a 12 oz bag of chocolate chips is 340.2 g; a 1.5 oz snack bag is 42.5 g. Food labels in the US often show both, rounded, such as "NET WT 16 OZ (1 LB) 454 g".

In US recipes the same abbreviation sometimes means fluid ounces, especially for liquids like milk, broth or water. Fluid ounces measure volume (29.57 mL each), not weight. Water weighs about 29.5 g per US fluid ounce, close to an ounce by weight, but oil or honey differ noticeably, so check which ounce a recipe means.

Popular uses

  • Converting US recipe weights for a metric scale
  • Reading package and portion sizes in grams
  • Converting parcel and letter weights for postage
  • Measuring tea, coffee and spices

Tips for the best result

  • Rounding to 28 g per ounce is fine for cooking; use the exact factor for anything you sell.
  • 1 lb is 16 oz, or 453.59237 g.
  • If the ingredient is a liquid, the recipe probably means fluid ounces.
